So, I recently got back from the Sedona area, & just wanted to share some info with you. If you're looking for a bike destination, lots of fun & lots to do besides biking. Flagstaff is just an hour away, offering winter skiing, or awesome MTB Trails as well. In December the high in Sedona was right around 60 degrees, lows in the 30s.
Sedona Bike & Bean, actually located in Oak Creek, 3 miles east of Sedona, offers quality bikes to rent. Santa Cruz, Titus, & Kona, as well can help you out with the morning coffee. The staff is good people, cool to hang, chill, & talk bikes

About a 1/4 mile behind the shop is the Red Agave Adventure Resort, recently purchased by the owners of the Sedona Bike & Bean.

We were on a family vaca, & stayed in one of the Chalets (A Frame), it comfortably slept 5-6 people, had a small kitchen with a table, nice because you didn't have to eat out all the time. As well there are gas grills outside of the Chalets. There was a pool, not useable in Dec, but two hot tubs as well. All for $200.00 a night! There is also a central seating area surrounding a fire pit, that was lit every night. People would come out, with beers, wine & Such, share their days adventures. Also there was a guitar in the check in area that people could use. Cool scene for sure.
As well as mountain biking, there are plenty of day hike areas. The local micro brew, Oak Creek, has a eating/drinking establishment in Sedona. Again Flagstaff is close by. We did a day trip up to Flag, checked out a Volcano Crater & some 800 year old Indian Pueblo ruins, You could walk thru these things, absolutely fascinating stuff.
If you ever get a chance to get out there, it's well worth the trip.
